Shrimp pasta and veggies

I didn’t have a lot of time to cook tonight so I really needed something that I could just throw together with whatever I had on hand.  We ended up with shrimp pasta and veggies and everyone loved it!  You could easily leave out the shrimp and it would be a delicious vegetarian dish.  And with a total prep and cook time of under 30 minutes, it’s a quick and easy meal.

Shrimp Pasta and Veggies

Serves 6

Ingredients:

1 box whole wheat angel hair pasta

1 tablespoon coconut oil

1 lb small/medium shrimp (I used pre-cooked and just heated them with the other ingredients)

2 medium zucchini, chopped

1 medium yellow squash, chopped

4 green onions

2 cups baby spinach

8 cherry tomatoes, halved

2 cloves of garlic

Directions:

Cook pasta according to package directions.  In a skillet (I use an iron skillet – read this about cooking with iron skillets), heat oil.  Add all ingredients and sauté until spinach has wilted and zucchini and squash are tender.  Combine pasta and shrimp and veggies and serve.
