Crock pot Minestrone

We eat a lot of crock pot soups at my house.  They are delicious, filling, healthy, and easy.  What’s not to love about that?!  Mr. Real Food specifically requested minestrone so this is to honor his request.  It only takes about 20 minutes to prep the ingredients and another 6 or so hours cooking in the crock pot.  Super easy!

Minestrone is a thick and hearty traditional Italian soup that you would find on almost any Italian’s table.
