Shrimp and pasta with tomatoes, mushrooms and spinach

Today was my 20th wedding anniversary!  So, instead of going out to dinner, I wanted to make a nice meal at home, something a little fancier than what we usually have.  This shrimp and pasta dish was perfect for that and super easy to make.  And it turned out beautifully and delicious!

 Shrimp and Pasta with tomatoes, mushroom and spinach


  • 1 lb extra large shrimp, thawed, peeled and deveined
  • 1 pinch crushed red pepper
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced mushrooms
  • 4 cups baby spinach
  • 1/2 lb whole wheat angel hair pasta
  • salt and pepper

In a bowl, toss the shrimp with the red pepper, herbs and salt and pepper.  Allow to sit while working on the rest.

Prepare the angel hair pasta according to package directions.  In a skillet, heat the oil and add the garlic.  Cook for about 30 seconds and add the tomatoes and mushrooms.  Sautee for about 2 minutes.

Add the shrimp and sear on each side for about two minutes, until shrimp is thoroughly cooked.  Add in spinach and allow to wilt.

Drain most of the water from the pasta and toss with the shrimp and tomato mixture.  Top with fresh parmesan cheese, if desired.
