This bread takes a while to cook but the results are worth it! I was very pleasantly surprised with how this one turned out! It had just the right amount of sweetness to it and will be perfect with coffee in the morning.
Apple and Pear Bread
3 cups unbleached all purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
3/4 cup plain Greek yogurt
1 cup turbinado
2 peeled grated pears (about 1 cup)
2 peeled grated apples (about 1 cup)
2 teaspoons vanilla extract
In a large bowl, combine flour, baking soda, baking powder, salt and cinnamon. In a separate bowl, mix together yogurt, eggs, turbinado, pears, apples, and vanilla. Fold wet ingredients into dry ingredients and mix thoroughly. Pour into lightly greased loaf pan and bake at 325F for 75 minutes until golden brown.
