Avocado Hummus

I love avocado and I love hummus so naturally I would love them both together.  Hummus is quick and easy to make so that’s always a go to snack and I had a ripe avocado that needed to be used.  And this combination didn’t disappoint!

Avocado Hummus

Ingredients:

  • 1 15oz-can Garbanzo beans, drained and rinsed
  • 1 large avocado
  • 1 clove garlic
  • 2 tbsp. cilantro
  • 2 tbsp. lemon juice
  • 3 tbsp. water
  • 1 tbsp. tahini
  • ¼ tsp. salt

Directions:

Combine all ingredients in food processor until thick and creamy.  Add more water if you don’t want it as thick.  Serve with pita bread or chips or raw vegetables.
