Baba Ghanoush

We got a very ripe eggplant in our co-op basket but I had never made anything with eggplant so this was going to be a new experience for us!  So I asked our Facebook community what I should make with it.  There were tons of suggestions that all sounded great!  I went with baba ghanoush….mainly because it was super simple to make and I like saying the name.  If you haven’t  heard of baba ghanoush before, it’s a traditional middle Eastern dish, very similar to hummus.  If you like the flavor of eggplant, you are sure to love this!

Traditional Baba Ghanoush


  • 1 large eggplant, roasted and cooled
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 fresh  lemons, juiced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt, or more to taste
  • Pinch of cayenne pepper
  • Paprika (for garnish)
  • Extra virgin olive oil



Place the pulp of the roasted eggplant into a bowl and combine with tahini, garlic, lemon juice, cumin, salt, and cayenne pepper.  Mix thoroughly.  Garnish with a drizzle of extra virgin olive oil and sprinkle of paprika.  Serve with pita chips.
