I often hear people say that they don’t eat vegetables for breakfast and are not really sure how to include them with breakfast. There are so many ways to include veggies with breakfast that add lots of nutrients but take no extra time to include. This is one of those super easy recipes!
Easy Breakfast Scramble
2 cups of baby spinach
1 cup sliced mushrooms
1 tsp. garlic salt
1 tsp. freshly ground pepper
Heat skillet on medium and lightly mist with oil. Whisk eggs in bowl and add to heated skillet. Add spinach, mushrooms, garlic salt, and pepper and cook until eggs are done, stirring frequently. Serve with sweet potato hash browns.
