Peanut Butter Granola Bars

I love granola bars.  They are just so convenient, portable, and healthy.  Right?  Um, no, not necessarily!  Just look at the label for these 100% natural granola bars:

Since when is high fructose corn syrup all natural?!?  You just don’t need to have all these ingredients to make delicious granola bar!

These granola bars are incredibly easy to make and are great for dessert, snacks, or breakfast (Mr. Real Food says they are perfect with a cup of coffee but I opted for the dessert option).  As with most of my other recipes, you just throw a few ingredients together, cook for a few minutes and then enjoy the deliciousness that you have made.

Peanut Butter Granola Bars

Ingredients:

3/4 cup all natural peanut butter (or you can make your own with peanuts and a food processor)

1/3 cup honey

1 egg

1 teaspoon vanilla extract

3 1/2 cups old-fashioned oats

1/2 cup coconut palm sugar

1/2 cup mini chocolate chips (optional)

Directions:

In a large bowl, combine the peanut butter, honey, egg and vanilla until blended.  Add the oats and sugar and mix well.  Stir in the chocolate chips.

Bake in a 13×9-inch baking dish at 350 degrees for 12-15 minutes.  Cool and cut into bars.

  3. I’m not familiar with coconut palm sugar? I have a daughter with an allergy to coconut, so probably shouldn’t try it. Do you think the proportion would be the same with granulated sugar?
