In our co-op basket this week, we got tons of fruit….peaches, plums, apples, and pears. While I do love fruit, this was a lot of fruit so I tried to get a little more creative and make a dessert instead of just eating it plain for a snack. This recipe was simple to throw together and cooked while we ate dinner. So we ended up with a nice warm dessert!
- 2 1/2 cups fresh peaches
- 1 tablespoon turinado sugar
- 3 tablespoons whole-wheat flour
- 1 tablespoon lemon juice
- 1/2 cup rolled oats
- 3 tablespoons coconut palm sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons olive oil
Preheat oven to 400 degrees and lightly oil 4 ramekins. Combine fruit with turbinado, 1 tablespoon flour and lemon juice. Pour into small baking dish or 4 ramekins. Combine oats, coconut palm sugar, the remaining 2 tablespoons flour and cinnamon. Drizzle with oil and stir to combine. Sprinkle over the fruit mixture. Bake until the fruit is bubbling and the topping is golden, 20 to 25 minutes. Let stand for at least 10 minutes before serving.
