Cucumber Salsa

If you’ve been reading my blog at all, you may have noticed that Mr. Real Food loves salsa.  I’m pretty sure he eats it at least 5 times a week.  This might be a problem if he’s eating some of the salsa you can find on store shelves.  Even some of the brands that claim to be “all-natural” aren’t really.  Natural flavor is NOT natural.  With something like salsa, the natural flavors in the ingredients make it taste perfect.  And making it yourself allows you to customize it to your tastes.  Up until recently, we’ve only made “standard” salsa with tomatoes, onion, jalapeno, and cilantro.  Then we tried pineapple salsa…yum!  And now, Mr. Real Food made this amazing cucumber salsa.  I would imagine that if you left it in the fridge overnight, the flavors would meld together nicely.  But it didn’t last long enough for us to try that!

Mr. Real Food Family’s Cucumber Salsa

Ingredients:
1 med cucumber, diced
1 med white onion, diced
1/2 cup cherry tomatoes, quartered
2 cloves of garlic, chopped
3/4 cup of cilantro, chopped
1 lime squeezed to taste
2 jalapeno peppers, chopped
Directions:
Combine all ingredients in a medium bowl and serve.  If you can wait, try refrigerating it overnight.
