Skillet Plum Cake

My family doesn’t eat many plums.  I’m not sure why….just something we don’t think of or have as a regular part of our diet.  But we got 8 plums in our co-op basket this week so I had to do something with them to use them up quickly.  So, when you’re not quite sure what to make, bake a cake!  I’ve been wanting to bake something in my iron skillet and this seemed like the perfect thing.  This cake is a delicious dessert (maybe topped with vanilla ice cream) or perfect for breakfast with a cup of coffee.  Don’t you just love cake for breakfast?!?


Skillet Plum Cake


7 plums, pitted and diced

1 1/2 cups white whole wheat flour

1 1/2 teaspoon baking powder

3/4 cup turbinado sugar

1/2 teaspoon salt

1 stick unsalted butter, softened

2 eggs (or egg substitute)

1/2 teaspoon vanilla extract

1/2 teaspoon lemon zest

2 tablespoons turbinado sugar

1/2 teaspoon cinnamon


Preheat oven to 350 degrees.   In a large bowl, cream the butter and 3/4 cup sugar together.  Add the eggs one at a time, beating well.  Add in the vanilla and lemon zest.  Stir in the plums and flour, baking powder, and salt.  Pour batter into an iron skillet (I added another sliced plum to the top and it baked in beautifully) and bake for 30-40 minutes until a toothpick interested into the middle comes out clean.   While cake is cooling, combine 2 tablespoons sugar and cinnamon and sprinkle on top while warm.  Enjoy!
