Chocolate Chocolate Chip Waffles

My daughters love anything with chocolate chips, especially pancakes.  So making chocolate chip waffles was kind of a no-brainer.  All I did for this recipe was slightly modify my Easy Waffles recipe and add cocoa and chocolate chips.  This made it super easy to split the batch and have a few plain waffles and a few chocolate chip waffles.  These were a big hit with the teenaged girls at my house!  Making extras and freezing them will give you a quick breakfast on the go!

Chocolate Chocolate Chip Waffles

Ingredients:

1 1/2 cup white whole wheat flour

1/2 teaspoon salt

2 teaspoons baking powder

4 tablespoons cocoa powder

2 eggs, beaten (or an egg-substitute for a vegan option)

1 cup almond milk

4 tablespoons coconut oil (melted if it’s solid)

1/3 cup mini chocolate chips

Directions:

Sift together flour, salt, baking powder, and cocoa powder.  Add eggs, milk, and oil and beat until smooth.  Add in chocolate chips.  Bake in a hot waffle iron until desired crispness.  Serve warm topped with your favorite waffle toppings.
