Chia Pomegranate Pudding

As you know from some of the other recipes I’ve posted (like these truffles, these peanut butter cookies, or these coconut energy bars), I sometimes don’t like to turn the oven on.  Call it lazy if you want, I call it being energy conservative and helping the environment.  So this recipe was just my thing.  Really it has all of the ideal things I look for in a recipe, no effort and few ingredients.  If you’re looking for something like that too, give this a shot!  Oh yeah, it’s healthy too!

Chia Pomegranate Pudding

makes 2 servings

Ingredients:

2 cups almond milk

5 T Chia Seeds

1/2 cup pomegranate seeds

Directions:

Whisk together chia seeds and almond milk.  Allow to sit for about 15 minutes and whisk again.  Cover and refrigerate overnight.  Stir and add pomegranate seeds to the top.  Enjoy!
