Sweet Potato Quinoa Chili

I’ve kind of been stuck on new ideas for recipes to make.  I can’t ever seem to find a happy medium….either I have a billion ideas that I need to do RIGHT NOW or nothing.  So I asked some friends for suggestions.  And healthy chili was one of those suggestions.  It was perfect timing too.  The weather has been pretty comfortable for the last few weeks in Texas but got really cold today.  And this chili hit the spot!


Sweet Potato Quinoa Chili

makes about 10 servings


  • 3 medium sweet potatoes, peeled and diced into 1 inch cubes
  • 2 cans of diced tomatoes
  • 1 can of organic black beans, drained
  • 1 can of great northern beans, drained
  • 3/4 cup of uncooked quinoa
  • 1 small onion, diced
  • 3 cups of water
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp black pepper


Add all ingredients to slow cooker and cook on low 6-8 hours.  You can adjust the seasoning to your own preference.  Top with avocado or Greek yogurt.
